When I first approached Andrew Economos to come on board as the Builder for my project Highlands Merchant I had no idea of the value & quality they would bring to my business. I had the initial concept of creating a simple ‘corner store cafe’ that would focus on local quality produce & good coffee - my brief was that I wanted it to be contemporary, clean without being cold & chic. Shortly after our initial meetings Brielle (Andrews wife & business partner) put forward design ideas that took my concept to whole new level. Together we collaborated on every detail, and on every decision they presented me with multiple options regarding budgeting. Together we would assess if the decision to either ’spend or save’ on every fitting, furniture piece or trade job would value to the customers experience or the efficiency of my business, and make a calculated selection accordingly. They guided me toward spending more money on things that really matter - quality lighting, handmade furniture & a beautiful custom made exterior that has helped gain a social media presence & set a new bar for the Southern Highlands. Customers every day are stopping me & thanking me for creating something of such beauty & substance in their region, tourism trade in Moss Vale has increased significantly & fellow businesses & suppliers are also reaping the rewards.
